Yes! Yes it is. Though I guarantee you, you wouldn’t have known it had I not told you. Everyone I have made this for couldn’t believe it either! This is the perfect meal to sneak in there for all those meat-lovin people in your life.
And the best part about it (besides being absolutely delicious) is that you can just stick it in the CROCK POT! Oh I love crock-pots and any recipe that involves them. I mean what is there not to love about throwing everything together, turning it on, leaving, and then coming back hours later to a hot pot of deliciousness with practically no work involved!

Is it Really Vegan Pumpkin Chili?!
Ingredients:
12oz box meatless crumbles (I found the Lightlife: Smart Grounds work the best)
1 medium onion (yellow or white) chopped
1 clove of garlic, minced
1 cup pumpkin puree
28oz diced tomatoes
15oz black beans
16oz bottle chili starter (THIS Tabasco brand Chili Starter is the best I have found, I tried other “chili sauces but they just aren’t as good)
2 Tablespoons Chili Powder
1 ½ teaspoons pumpkin pie spice
Salt and Pepper to taste
Optional: 1 fresh jalapeno chopped (if you like a little more spice)
Directions:
Throw everything in the crock-pot. Mix it up. Turn it to low, cook for 3-4 hours.
Then indulge in the goodness, and thank me later.
If you don’t have a crock-pot never fear, you can still have this tasty meal. Put everything in a large pot on the stove. Bring to a boil. Stir. Turn down the heat until it is just at a simmer. Cook for 60 to 90 minutes.
Eat with a spoon…or just scoop it up with some chips!
Topping Ideas: fresh avocados, cilantro, tomatoes, lime, Daiya dairy free cheese, nutritional yeast, and/or cashew sour cream.
