Grams’ Banana Bread Make Over

Putting a healthy twist on my childhood banana bread recipe.

My Grandma Mary was the most amazing woman (aside from my own mother of course). She was at all my sporting events growing up and at any race of mine she could get to from triathlons to marathons; always there cheering me (and my two brothers) on with cowbells and posters.

She loved the color red and peanut butter and bananas…actually just peanut butter on anything, or nothing at all, just a jar and a spoon. She was never one I would deem to be “health conscious” and would often order a fudge sundae as her meal at a restaurant.

I believe Grams and I always shared a special bond because we shared the same birthday. And in honor of her birthday (April 2nd) I have been making one of her favorite recipes, which I believe she actually got from her great aunt…

 

 

 

 

Below, on left is the banana recipe I grew up eating and making.

On the right is what I’ve done to try and make it “healthier.” I’ve been making this all week and letting people try it and nearly everyone that has had it has wanted the recipe!

Grams’ Original

Revised and Healthier(vegan/gluten-free/paleo option)

  • 2 cups flour 

 

 

 

  • 1 ½ cups sugar

 

  • ½ cup crisco shortening

 

  • 2 eggs
  • 1 teaspoon baking soda
  • 2 teaspoon baking powder
  • Dash of salt
  • ½ sour milk (milk+ dash of vinegar let sit for 2 min.)
  • 3 extra ripe bananas
  • 2 cups all purpose gluten-free flour
    OR try mixing these for a Plaeo Grain Free alternative:1/2 cup arrowroot flour + 1/2 cup coconut flour, sifted + 1 1/3  cup almond meal flour (*Note: this combo of flours will make the bread denser and may need to be cooked longer)
  • 1 1/4 cup sugar (try combing: 1 c coconut sugar + 1/4 cup honey/maple syrup)
  • ½ cup vegan butter (softened) or palm shortening
  • 2 egg replacement/ flaxseed egg
  • 1 teaspoon baking soda
  • 2 teaspoon baking powder
  • ½  teaspoon sea salt
  • 2 teaspoon cinnamon
  • 1 teaspoon vanilla extract
  • ½ sour milk (dairy free milk of your choosing + dash of vinegar let sit for 2 min.)
  • 3 extra ripe bananas
  • Optional add-ins:
  • 1 cup carob chips/ chocolate chips/ chopped walnuts
