Dark Chocolate Hail Merry Macaroons Copycat Recipe

Hubba Yumma! I love me some Dark Chocolate Hail Merry Macaroons, but at $4-5 for a tiny bag, they don’t quite fit into the new baby budget (the one my husband wishes we had, sorry babe). Especially when I want to by like 10 bags because I could easily devour one bag in one sitting. It takes some serious self control for me to only eat one! Ok, ok…two.

They are the perfect little bite sized, rich dark chocolatey sweet treat that like to have with my cup of coffee. Today as I was looking at the ingredient on the bag, I realized “hey, I have all of these in my pantry right now!” So I decided to try and recreate it myself.
And let me tell you, this was seriously the easiest copycat recipe to make. I don’t know why I haven’t been doing this from the start!

Next I want to try and figure out the caramel sea salt flavor!

Dark Chocolate Hail Merry Macaroons Copycat Recipe

Makes: 12 bite sized balls

Ingredients:
1 1/4 c shredded coconut (unsweetened)
2 tbs coffee (can use water)
1/4 c cocoa powder
1 tbs coconut oil
2 tbs maple syrup
1/2 tsp Madagascar vanilla extract
pinch of sea salt
Directions:

Blend the coconut and coffee together first in your food processor. Add the rest of the ingredients and blend together until it’s all thick and goopy.

Chill in refrigerator for 30min or until firm. This will make it easier to roll into balls.

Roll up into bite-size balls and enjoy with coffee or tea.

  1. I tried this recipe twice now, and failed both times, although the results were still edible.

    I think the “1/4 cocoa powder” is throwing me. Is that 1/4 what measurement? lol >.<

    1. Oh no I’m so sorry! How did it fail? Were they not thick enough? or what?
      It should be 1/4 cup of the cocoa powder!
