It’s fall? It’s fall. It’s fall! And what better way to properly welcome fall than with pumpkin!
Last night I quickly threw all these ingredients in a crock pot and this morning I got to wake up this morning to a house smelling like pumpkin pie and hot food all ready for me. One of the many reasons I love crock pots, very little work that results in a great tasting meal!
I must admit, it is much more enticing to get out of bed when it smells like pumpkin pie 🙂

Crock Pot Pumpkin Pie Oatmeal
Ingredients:
1 cup steel cut oats
3 1/2 cups almond or other non dairy milk (or half water)
1 cup pumpkin puree
1/4 cup maple syrup (option sweetener)
1 tsp vanilla
1 tsp pumpkin pie spice
1/4 tsp cinnamon
1/4 tsp salt
1 tsp turmeric (because it’s so dang awesome and you should sneak it into everything)
*Turmeric is believed to have anti-inflammatory properties and this warm delightful indian spice makes a good addition to any recipe to counter act the up coming flu-season
Mix all the ingredients in a crock pot and cook on low for 6-8 hours.
Wake up. Devour.
I laced my bowl with pecans, chia seeds and an extra drizzle of coconut cream!
