Yay fall! I feel like this season tends to bring out the best in people’s cooking concoctions, as they boldly play around with delightful ingredients like pumpkin, squash, cranberries, nuts, and kale. Here are few fall recipes I stumbled across that look absolutely mouth watering and perfect for fall. I can’t wait to give them all a try!
1. This Creamy Vegan Navy Bean and Vegetable Soup looks the perfect thing to cozy up with now that we are finally getting some chilly fall weather here in Texas!
2. This Roasted Acorn Squash with Wild Rice Pistachio Stuffing just might have to be on my Thanksgiving table this year!
3. ‘Pomegranate Salsa’ and butternut squash on a kale pizza! Why didn’t I think of that?! This would be easy to make vegan by substituting something like daiya cheese for the topping. Dear Caramelized Butternut Squash + Kale Pizza, I cannot wait to devour you.
4. I have definitely made this Smoky Butternut Squash Sauce more than once in the past couple of weeks. Here, Angela mixes hers up with some Kale and pasta shells for the perfect vegan ‘mac n cheese” alternative.
This here is my version of her recipe. I tweaked it just a tad and added 1/4 cup of pumpkin puree and a handful fresh thyme from my herb garden, poured it over some spaghetti squash instead of pasta and bam! Perfection.
