Chewy Almond Butter Chocolate Chip Granola Bars (GF, V)

I love granola bars, but I hate that the ones from the store are always so packed with processed sugar. Aren’t they supposed to be “healthy.” They’re just so convenient to grab and go, but it’s more like eating a candy bar than a granola bar.

The thing is they really are supper easy to make. Just mix up up your ingredients and throw them in the oven, and you have delicious (actually healthy) homemade granola bars in 15 minutes!

Chewy Chocolat Chip Granola Bars

We’re in Colorado this weekend for some skiing and boarding and if you’ve ever been before you know that you exert a lot of energy and need some snacks for the mountain. So I made up a batch of these for us to take with us and they are perfect.

Chewy Chocolate Chip Granola Bars (V, GF)

Chewy Almond Butter Chocolate Chip Granola Bars (GF, V)

Ingredients:
1 cup gluten free rolled oats (not the quick cook kind)
1/2 cup brown rice crispy cereal
1/4 cup almond flour
2 Tbs ground flaxseed meal
1/4 tsp. baking soda
1/2 cup almond butter
1/4 cup maple syrup
1 tsp. vanilla extract
⅓ cup chocolate chips
1/4 coconut flakes (optional, but I added some because I love coconut)
1/4 tsp. salt

Directions:

Preheat oven to 350 degrees F.
Combine all the dry ingredients in a bowl.
Combine wet ingredients in another.
Mix together.
Add chocolate chips, optional coconut flakes, and salt.
Pour into a lightly-greased 8X8 pan. Place a piece of parchment paper over the mixture and use a heavy object like glass measuring cup and press down firmly on the mixture until it is compact and fills the pan. Remove parchment paper.
Bake for 10-15 minutes. Remove from oven and let cool for 10 minutes.
Cut into bars.
