Banana Walnut Ice Cream For My Birthday!

I have been LOVING this gorgeous Texas weather we have been having lately! This past weekend I couldn’t get enough of it.
I ran a race with some other teacher friends from my school district for a charity event.

I worked with walkbold for their first “sister session” to raise money for a “sister” in need.

I took my sweet pup Kona girl paddle boarding for the first time.

And then I went for a nice 10 mile run with a friend around the lake.
I just can’t get enough of this gorgeous sunshine! It’s getting me all pumped up for summer, and with that, my favorite summer treat: banana ice cream! Nothing beats the feeling cold ice cream melting in your mouth while sitting out in the hot sunshine. I have made so many different variations of this, but today I made a new favorite concoction that I want to share with you!

I love the chewy gooey bites of dates in this ‘ice cream’ with the dash of salt, it creates this yummy salted-caramel like taste in your mouth.
Make yourself a big ole bowl, sit out side, and enjoy this with me on my birthday. Cheers! :]

Banana Walnut Ice Cream  (GF, Dairy Free, Vegan)

1/3 cup walnuts
2 medjool dates
2 frozen bananas
dash of sea salt

In a blender or food processor blend the walnuts until finely ground.
Add the dates and blend a little longer until dates and walnuts are blended together.
Finally add in pieces of the frozen bananas and dash of sea salt. Blend on high until creamy.

Top with pieces of walnuts, cacao nibs, raw chocolate chips, or fresh fruit.
Enjoy out in the sunshine with friends!
